The quality of the liquid is our true language, not a logo, a price, or a design. We are real flavors, we are genuine liquid experiences; no additives, no pretensions, extraordinary. WHAT DO YOU NEED TO KNOW?
The difference between a genuine artisanal spirit and industrial production has a direct relationship with taste and well-being.
1. THE ORIGIN OF THE RAW MATERIAL DOES MATTER.
An agave, a cane, a grain cultivated at the right moment of maturity, without adding agrochemicals to force its development, results in a healthy material, free of residual chemicals, rich in sugars that enhance the body of the distillate. Above all, it will mature in flavors, expressing more notes, with a taste that is more floral, spicy, and complex rather than herbal. Additionally, the manual selection of the raw material ensures that only the plant ingredients that are ready are processed, guaranteeing the highest possible quality distillate. In the industry, processing the entire harvest without individual selection leads to deviations in the obtained flavor, which are then resolved with additives, filters, or a lower alcohol content that prevents one from noticing these impurities.
2. FERMENTATION.
The industry uses cultivated, selected, and improved yeasts for higher sugar-alcohol yields. When we use wild yeasts, we allow native organisms to naturally process each raw material wisely, obtaining the genuine sweetness or flavor of nature, not just a high alcohol yield.
3. AGING.
Añejar en Roble Francés puede ser 10 veces más costoso que el Roble Americano. Añejar por el tiempo completo o utilizar un método solera son cosas muy diferentes, al igual que hacer un blend de alcoholes nuevos y alcoholes añejos. Es importante conocer los detalles del añejamiento del producto que consumes. En la industria, para todos los segmentos, esta ampliamente aceptado y es frecuente el uso de aditivos. Ingredientes concentrados, sintetizados o derivados de ingredientes naturales que se utilizan para mejorar un perfil, cubrir impurezas o lograr algo que naturalmente no se ha logrado. Sabores vainilla o roble, color caramelo para aparentar mayor añejamiento, azúcar o mieles son algunos de los aditivos más comunes. En Casa Elemental no utilizamos aditivos.
4. DETAILS THAT MATTER.
A slower baking, aging under natural conditions, distillation in copper, and the use of artisan stills or columns are processes that undoubtedly create an unparalleled liquid experience. Genuine flavors are built during the process.
DOES YOUR DISTILLATE HAVE ANY SOCIAL OR ENVIRONMENTAL IMPACT?
We know you're a conscious consumer based on what you consume, but do you know what goes into what you drink? Brands harvesting lands without concern for soil erosion or sustainable water use, crops purchased without considering the cost to the producer—this is not elemental language. We reforest the sugarcane fields every 6 harvests, promote the use of mycorrhizae and organic solutions in the field, pay more than a fair price for the crops, above regional prices, and strive for a healthy working environment for both direct and indirect team members.
PHILOSOPHY.
We select and co-invest in artisanal distillates, unique recipes, unique beverages, with only 2 rules: 1. No additives, to not compromise the true flavor of nature. 2. Deep respect for nature, with policies such as not consuming products from deforestation, reforestation, biodynamic farming, or sustainable estate management; and respect for the human beings involved directly and indirectly in the process, with fair payment or purchasing from family producers with their own land. The raw materials for our distillates are obtained from family-owned spaces.
